Summer Eats Aug 2013

Here's a quick look at what I'm eating this summer, along with a few summer photos.

Back to regular blog topics soon.

What works:

1. Eating real, whole foods- low inflammatory , no processed sugar , no grains, lots of good for you fats - avocado, olive oil , coconut oil, avocado oil ( available at Costco).

Proteins , eggs, chicken, turkey , ground bison, and occasionally some shrimp and grass fed beef.

And what seems like a metric ton of vegetables. Broccoli slaw, shredded cabbage , tomatoes, onions, bell pepper.

Fresh fruit, blueberries and raspberries. Few slices of fresh peaches.

Coffee and 85% chocolate. Lots of water.

What did not work:

Cereal, whole wheat anything. , biscotti , bagels, 100 calorie packs, buy 1 get 1 free candy bars, and processed high carb bars.

Here's my summer salute to eating real food that keeps me in weight maintenance and in good physical and emotional health


Ground bison, broccoli slaw noodles, avocados, blueberries, chocolate

Shrimp, home made pesto over spaghetti squash

I eat, I walk, I take photos. This scenario repeats every day.  This works for me in maintenance.

I eat, walk, take photos over the weekend, too. These habits work for me.

    1. Homemade basil, olive oil, garlic, and some salt. Lots of garlic. It's all a big experiment, Leigh. I've been nut free for about 4-6 weeks. I feel a lot better...

    2. Thanks, Marc and Susan- that recipe is a real winner with all my friends and family. So filling and so good. Glad to be off the canola processed mayo- only egg yolks, avocado, green onion, and some sea salt.

  5. Hi Karen, I am absolutely enjoying a summer where I'm not fat! And I'm also not on a rollercoaster of sizes either--yay! Certainly, that is worth the metric ton of vegetables. I also eat a little chocolate--because this is my life and I eat chocolate. :D

    1. Happily, Marion, with the 2 big elimination diets this year- the Whole30 and the low carb challenge- when I bring back in the 85% chocolate- no problems. So happy about that. Summer and one size is a super gift- like Christmas in July. :)
