When the power went out last week, and I got all settled with the lights, it was past time for dinner. I found that my food in the refrigerator was still cold. I wanted to eat items that I would have to throw away when they would spoil. And I needed to stay on my food plan (Take Shape for Life/ Medifast)
So dinner was
- 2 hard boiled eggs, tiny bit of light house salsa dressing,
- 2 of Sandy's Revolution rolls (recipe on Sandy's Kitchen blog- scroll to the end of the page http://www.lighterrecipes.com/2011/09/medifast-picnic.html )
- 2 cups baby spinach
- 1/2 cup of bell pepper
In one of my next posts, I'll review what emergency items I had on hand that worked well, what I found I could use from around the house, and what items I was missing that I really need to have on hand. The power outage was a good drill and reminder of how much we depend on power and the Internet.
