Garlic and Lemon Roasted Cauliflower, recipe from the Paleo Mom

Yep! I finally made the Garlic and Lemon Roasted Cauliflower from the Paleo Mom.

My photo is included. This recipe will fill your house with a nice roasted garlic smell. As long as you find roasted garlic a nice smell, everything should work out just fine! ;) I modified this recipe by not adding the parsley (forgot) and the black pepper (don't like).

I'm considering roasting up a batch and taking some for Thanksgiving meals. 

Costco has large bags of cauliflower and I used about 2/3 of one in a 9X13 pan. I used coconut oil for the roasting and some pink sea salt.

Great weekend dish to make. Let me know if you try it.

  1. I still can barely tolerate cauliflower, and only raw. Cooked disgusts me, unfortunately. Both texture and taste. Oh we'll, glad it works for you!

    1. Interesting, Gwen. I'm picky about my cooked cauliflower and it worked good for me. I have a few no go veggies, too.

    I should roast more vegetables. I have two acorn squash that I'm determined not to eat as sweet things this year. So I might have to roast them, hey? I've never tried roasted cauliflower, but I should not let my bad cooking of boiled cauliflower stop me. A person has to learn to cook vegetables well. Many people don't like certain vegetables solely because they've never had them cooked well. Lately many people have been making cauliflower recipes that surprised me with how good they were! :D

    1. PS- thank you for the comment on my photo, Marion. I think it helps new visitors see the changes. And, I want people transitioning from a low-fat, fat phobic food template to see that you can eat higher fat (the right kind) and still stay in weight maintenance.

  3. Hi Marion. I needed to re-learn how to cook- especially with full fat coconut oil, olive oil, and now new to me avocado oil ( I'm sensitive to dairy, so grass fed butter is out!). And, spices. Coming from the mid-west, spices were not a priority in my food environment.

    Just banishing the low-fat/fat free phobias opened up a whole new veggie world for me. I never thought I liked brussles sprouts and now, they are fantastic sauteed in coconut oil with some garlic sea salt.
