Crust less Breakfast Quiche- Customizable!

Base:
1/2 cup full fat or light coconut milk (choose a brand with only coconut milk)
6 eggs

Customizable
4 asparagus spears, slightly sauteed, with stalks trimmed, then cut into small pieces
1/2 cup white onion, sauteed
2 cloves of garlic, crushed
4 slices of bacon or some sausage
sea salt , garlic sea salt and/or pepper to taste

Pre-heat the oven to 350 degrees F. Add the coconut milk and eggs to a medium bowl and mix well.

Now comes the fun part- add in what you have on hand or your favorite egg friendly add-ins, chopped up in pieces. I used asparagus, red onion, garlic, and bacon. Add sea salt or garlic sea salt to taste. Pepper if you like it.

Mix all ingredients in the bowl. Spray or grease the pie pan ( I used coconut oil spray from Trader Joes) and pour in the egg/vegetable mixture. Bake for 35-40 mins or longer, until the center is set.

Refrigerate left overs. Re-heat over 2-3 days max. Freezing didn't really work on this one

    1. Thanks , Diane. Since I moved from loosing weight to maintaining, I've had to research and try new recipes. It became clear to me that the wheat and processed sugar weren't going to keep me at goal, so to be successful I was going to have to have a whole new way of eating.

      I attended an Everyday Paleo workshop in Laguna Nigel,Ca by Sarah Fragoso. She has a cookbook called Everyday Paleo that I've been using a lot. I've also used some Primal recipes ( primal includes dairy),too. I stay on the lower animal fat side of things, but use olive oil, and coconut oil to sauté veggies. I eat avocado slices, macadamia nuts, salmon, and sometimes almonds for fats

      Cooking and eating in the new way is time consuming, but I've found ways to stream line things, like crockpot cooking and freezing down meals for the week. I feel too good to not keep going down this path. Being a single parent, head of household, I've got to keep myself healthy. Much better to spend my time vacationing with the kiddo than going to doctors apps, etc. Karen P

  2. Do you cook the asparagus first or put it in raw? Thx!

    1. Raw. Since it had 40 mins or so to bake, it was not over cooked. I don't like mushy veggies. I paired a slice of this quiche with some heirloom tomato slices ( On sale from fresh and easy). And a few slices of avocado. Good luck with your Whole 30. I'll be trying one later this summer or fall.
